Say what??? How does what we eat impact the planet’s health and climate change? Following on from the discussion about Pope Francis’ encyclical letter, this session will look at how climate change is affecting the quality of foods locally and globally, and how our current food systems and diet choices provide opportunities for each of us to reduce the impact on greenhouse gas emissions and environmental degradation. We don’t all have to become vegetarians, but there are choices we make as “omnivores” that can alter our diet-environment footprint. The session will be led by Dr. Nancy Krebs, who is starting to tackle these topics in her nutrition research.
